Anybody need some ham?

The days of big family dinners are gone due to the fact that I don't have much family left.

And so Easter came around.  There were just three of us and we wanted a nice Easter ham.  Of course we waited too late to go in search of a ham and the smallest one we could find was 8.24 lbs.

EIGHT POUNDS OF HAM???  What were we thinking?

But we bought it and cooked it.  "We'll each eat two pounds of it for supper, and then you'll only have two pounds of leftovers," my mother said.

Um...sure.

Actually, after dinner Mr. L cut off most of the spiral ham and put it in a gallon freezer bag and popped it into the fridge.  I put the HUGE bone (which still had a lot of meat on it) in two freezer bags and popped it in the freezer.  (Boy am I glad we have that little chest freezer in the garage.)


So, I figured we could eat ham sandwiches, and I could make myself a few western omelets.  I'm not a fan of split pea soup, but would love to hear other recipes that where a ham bone can be used.

  1. Ham bones are great when you make beans... Any type will do, but I love Navy Beans the best. Recipes are on the bags.

  2. We didn't have a big family meal either. There were four of us so I made a roast and all the fixins that go with that. Being a southern "belle" I to use ham bones to season beans as well. The flavor is greatly improved with the ham bone. TO go with that I usually make fried potatoes with onions and cornbread. Chop up green onions to top the beans and put a bottle of hot sauce on the table for those that want it and call it dinner. Of course that's a "winter" meal.

  3. I don't like ham but Dave always buys a huge one! He makes split pea soup (which I do like) and ham salad and ham sandwiches and ham for breakfast and on and on - I don't know how one person can eat so much ham. :D

  4. Our favorite way to use leftover ham is to add it to scalloped potatoes.
    And be careful eating too much at once - it can really spike your blood pressure.
    We bought a leg of lamb, asked the butcher to cut in into steaks, and grilled some for dinner for the two of us and froze the rest.

  5. Oooo, yes, ham & bean soup! Ham in scalloped potatoes! Ham salad!! (Run the ham in your food processor & add some 'rat trap' cheese -colby- and your onion, sweet relish if you like, and celery and mayonnaise -- yummy.) Ham & green beans. Ah, the list is endless ... just like the ham you have leftover! :grin:
