This recipe is something my aunt made one summer Sunday: cracker salad. OMG, is it good? (It is, take my word.) It doesn't take a lot of ingredients, it's easy, and it tastes great. How can you miss?

sleeve saltine crackers
1 large tomato, finely chopped
3 green onions, finely chopped
1 1/2 cups mayonnaise
1 hard-boiled egg, finely chopped
Salt
Freshly ground black pepper

In
a medium size bowl, coarsely crush the crackers with your hands - you should
have big cracker pieces. Add the remaining ingredients, mix well, and serve
immediately. Season, to taste, with salt and pepper. (Don't let this dish sit, or the crackers become mushy. Don't worry; it won't last long enough for leftovers.)
