ODE TO A CAULIFLOWER

One of the things I love most about summer is FRESH VEGETABLES.  The yard sales have been a huge disappointment this year, so is it any wonder that sometimes the best thing I can find is a vegetable?

Cauliflower Last week, after wasting too much gas and not finding anything fun at the yard sales, we stopped at a farm stand and found the world's most perfect cauliflower.  Even better--it was only a dollar!

I LOVE cauliflower and I have a really easy recipe that uses only three ingredients.

Boil as much cauliflower as your family can eat.  When it's almost done, remove it from the boiling water and place in an oven proof dish.  Sprinkle (or dump on) it with your favorite cheese.  (I've used Parmesan, cheddar and mozzarella), and then sprinkle (or dump on) seasoned (or unseasoned--depending on your preference) breadcrumbs.  Bake at 360 until the cheese melts and the breadcrumbs are golden brown (10-15 minutes).

Yum!

  1. That sounds marvelous. Who knows, maybe even hubby will eat that dish -- it's smothered in CHEESE!!! I'll have to go to the nearest farmer's market & see if they have any cauliflower. (Little cauliflowerets -- raw -- sprinkled with flavored salt & Parm makes for a nice & healthy change from popcorn, too.)

  2. That is the prettiest head of cauliflower I have ever seen! One of our fave ways to fix it is to cut it intoy pieces and put on a baking sheet. Sprinkle with olive oil, salt, pepper and any other spice you like (I use garlic and whatever strikes my fancy). Bake in a 400 degree oven for 45 minutes; stirring half way between. It is fabulous!!!! We are a gluten/casein free family and all love this...though I wish we could try your recipe just once... I miss cheese ;-)

  3. try this with cauliflower... chop up small, no stems, mix with chopped broccoli, onion, garlic, season salt, carrots, and cream of celey soup. bake for 20 min. sooooo good.
